What records should I keep for gig or freelance pay in Italy?

The tax agency says both the person who issues an electronic invoice and the person who receives one must keep it in the way the law requires. Saving the file on a computer is not that keeping. The agency offers a free keeping service for electronic invoices sent and received through its exchange system.
